The following is the recipe for a healthy and tasty salad along with its health benefits and nutritious values that will boost your health and well-being this festive season.


Healthy way to lead the festivities!


  • 10 cups of torn romaine lettuce (other kind works, but this one works wonders!)
  • 2 red apples, cubed
  • 2 pears, cubed
  • 1 cup of shredded Swiss cheese (yummy!)
  • ½ cup of dried cranberries
  • 6 tablespoons of lemon juice
  • 3 tablespoons of canola oil
  • 3 tablespoons of light corn syrup
  • 1½ teaspoons of grated onion
  • 1½ teaspoons of Dijon mustard
  • ½ teaspoon of table salt
  • ½ cup of chopped and lightly salted cashews


  • Combine the first five ingredients mentioned in the list in a salad bowl.
  • In a small bowl, whisk the lemon juice, oil and corn syrup with onions, mustard and salt to make the dressing.
  • Pour the romaine mixture, made earlier, and toss it around to coat it with the dressing.
  • To complete the dish, sprinkle the salted cashews on top.
  • Viola! Your delicious and healthy lettuce salad is ready to be devoured.

Nutritional Value:

  • A cup full of this lettuce, fruit and nut salad contains approximately 144 calories, 8 grams of fat, 2 grams of which would be saturated fats, 7 milligrams of cholesterol, 134 milligrams of sodium, 17 grams of carbohydrates (9 grams of sugar and 3 grams of fiber), and 4 grams of proteins.
  • There is 1½ fat, 1 starch and 1 vegetable in the salad, which makes it not entirely diabetic friendly but tiny portions should be okay.

Secret Tip:

  • To make this salad completely diabetic friendly, leave out the corn syrup and add stevia extracts instead. That will make it as diabetic friendly as they come.
  • The fruits used in the salad are low in sugar yet high in nutrition value.
  • Adding California Mandarin Oranges to the recipe can add an extra zing to it, if you prefer so.


  • All the ingredients used in the salad are rich in antioxidants. They reduce oxidative stress and enhance immunity.
  • Cranberries are considered superfood and contain minerals and vitamins along with healthy plant compounds.
  • Cashews are rich in Vitamin E and provide better tissue binding while promoting healthy growth of the nervous system.
  • Together, these ingredients provide the body with most of the essential vitamins, minerals and amino acids.
